The first time I made Gazpacho, I thought it was supposed to be a drink, and I used the food processor and chopped everything up really fine, and it does make a delicious and refreshing summer drink, or even a light meal. It was from my Dr. McDougall cookbook.
This time, I am going to make one that is more like a salsa, and has chunks of veggies in it. I have not tried this recipe yet, but it looks easy enough for me to make it, and should be great in the humid weather we are having.
