Gazpacho ! Cool summertime food….

The first time I made Gazpacho, I thought it was supposed to be a drink, and I used the food processor and chopped everything up really fine, and it does make a delicious and refreshing summer drink, or even a light meal. It was from my Dr. McDougall cookbook.
This time, I am going to make one that is more like a salsa, and has chunks of veggies in it. I have not tried this recipe yet, but it looks easy enough for me to make it, and should be great in the humid weather we are having.

 
This turns out to be a great summertime meal idea ! I made the gazpacho , following the instruction from this YT video, and it turned out to be just what I like.
It is not as processed as most of the other videos i watched, and this one is actually more like a fresh salsa as far as how much it is chopped up.
I decided to make it into a gazpacho salad, so i cooked some vegetable rotini, and added that as well as a can of whole kernel corn. Mixed everything together and put it in the fridge.
The pasta gives it more substance than just having a bowl of the raw veggies would have. I had a cheese sandwich and a small bowl of the gazpacho salad and it made a perfect breakfast this morning, too.
Now…..off to work in the back yard berry adventure before it gets too hot (and then we can head for the swimming pool to cool down).
 
As I cut back a lot, feeling crappy as intended on the diabetes drugs, some meals here are just tomato sauce with some grated parmesan and red pepper flakes stirred in... and strips of whole grain toasted bread as dippers. Not chilled, but room temperature.
