Last meal cooked

Making escalloped potatoes with ham right now, slightly cheesy sauce. We'll see how it turns out.

At least I got to it and mixed everything once the taters were softened. Otherwise it would be wet on the bottom, with the sauce becoming one giant dumpling on the top!

Cooked now, letting it all "set." Licked the spoon though and mmm, pretty good.

When we went to Kroger for the Tuesday discounts, I found a sirloin tip roast that was on closeout for half price, so I got it. I cut it into 4 parts and used one part to make a pot roast with lots of veggies for dinner yesterday, and it turned out good. We still have some leftover, but will finish that today.
 
Id think the lady time I tried cooking roast beef as Aussies call a beef roast , was….prob 30 years ago ..it was dry and tough ….I've never tried since ….what the big secret to cooking a nice moist roast beef @Yvonne Smith

We have topside meats branded topside or bolar for roasting

I like to roast a lamb leg in warmer months ( coming up ) as it normally lasts us for at least 4 meals ( not that we have it every day …I usually make something in between) …hubs partially like sliced lamb dipped in a very light batter and fried with very little oil
the batter is very thin but it’s a tasty snack or to have with a salad for a meal
I use cornflour and egg and a little milk… batter

I actually make a pot roast , and I use an electric skillet and not the oven, and I cook it until it is falling apart tender, @Kate Ellery . I have a little electric cooker called a “Grillet”, and it has a temperature gauge on it.
I can turn it up on high and sear the meat and onions or whatever I am adding along with the meat. Then I turn it down, add more veggies, and just let it cook more like a slow cooker until the roast is done and ready to eat.

Took two medium potatoes, cubed them to about 1/4 to 3/8 size. Tossed these with a little salt, pepper, and oil. Air-fried until somewhat crisp.

Over those went half a can of heated "chili, no beans" for a meaty "gravy." No cheese on hand or I'd have added some shreds of that. Finely chopped onion on top.

Crude as it is, probably better than some kind of fast-food product. Reminded me a little of the old Wendy's Baked Potato with Chili though. Don't think I've bought that since my kids were young.

Mine aren't worth discussing either, I am still too skinny, only 110lb.s and thats gaining 3lb.s in past year.

And I'm not even tall at 5'4" like Skinny Minnie

I like oatmeal with berries, too, and I really like oatmeal with apples and cinnamon. Lately, I have been having my granola with blueberries and yogurt, but if the weather is going to be cold, then I am thinking that I will cook either oatmeal or maybe the Red Mill 10-grain cereal. I got it for Bobby, and it is really good, and has a nice variety of grains in it . I like the steel cut oats, too. They are more of a whole grain and have a different flavor than rolled oats have.
